Grown at elevations of 800–2,000 meters, the pods mature slowly, allowing the oils inside to deepen in both flavour and fragrance.Harvesting is done by hand, ensuring only fully ripened pods firm, brownish-purple, and oil-rich are picked.
The iconic smoky flavour comes from a traditional bhatti drying process, where pods are slowly dried over wood fires for 24-48 hours. This slow, natural method gives the spice its earthy, intense profile. Once dried, the pods are cleaned, graded, and packed with minimal handling to retain their essential oils and natural oils.
